I know some people are wondering, “but she’s already got a Garden egg Stew recipe on the blog nah. Yes, I do have one already. I recently shot a video for my YouTube channel, thought to post it on here regardless. The recipe is pretty much like like the previous recipe, just a few negligible tweaks here and there but it never hurts to have a video recipe as well now, does it?
Anyway, without wasting any more time, here’s the video as well as ingredients list.

8-10 White/Green Garden Eggs OR 2 Medium Aubergines/Eggplants
1/2 Cup Palm Oil
2 Big Red Bell Peppers
3 Tomatoes
2 Scotch Bonnets (Ata Rodo)

Cooked Meats/ Ponmo
Smoked Prawns
Shredded Smoked Fish)
